What does "con 8" mean?
I recently found a piece of music that has "con 8" written underneath an Eb on the bass staff. I know "con" means with, but I'm not sure if the 8 means octave or something like that. I would appreciate it if someone could tell me what it means.

Con means with as you said. 8 means octave most likely. I guess it means that you should play it one octave below (considering that it's written below the Eb).
