Why only aolean and Ionian?

Why only aolean and Ionian?
I love finding new ways to make music and something that has always interested me is if there are 7 modes why do we only primarly use 2 of them? ?
Modal chord progressions seem to be static as the go between two chords either up or down ex: E - F - E -F ect...
But yet, in major and minor keys, we can make a 2-5(7)-1 or 1-4-5(7) Chord progressions, why, is it what we're used to?
Why do these two modes are the only ones that have chords we seem to be able to jump around and still sound like the key?
Is it possible to mess with say for example, the Phrygian mode compose, study, experiment until you become so used to it that it becomes a third types that can be used just as major and minor?? That would be cool but It just makes no sense to me as to why modes sound strange. Imagine if you could use all 7 modes and have 1000s of songs written entirely in all 12 keys in all 7 modes commonly!!
