Playing the piano like a typist...

But not mechanically. What I mean is that I want to learn that tactile recognition of the keyboard that makes it so that when one is (trying to) sight read sheet music, they don't have to keep looking at the keyboard for small jumps (less than an octave maybe?). So, how is it done?

Black keys are higher than white ones! Try to play a few notes without looking, you'll see it's easy!
Of course, routine and great habit of the keyboard does help...

It means that you need to be used to the keyboard, i.e. have played a lot, just like on a computer keyboard.

Part of how learning keyboard recognition is holding your fingers over the "home" keys. That is the letter F and the letter J. Then you move specified fingers up and down without moving the position of your hands at all. The skills are not the same but they are similar so if you can touch type, then you should be able to apply similar principles. That's one of the reasons for learning scales so that you train your fingers to recognise the relative position of the keys from where you are starting. I'm not a very good pianist but I found learning to type easier when I realised that it was similar to learning the piano. It breaks down eventually but what really helps is knowing that if you have trained your fingers on a keyboard for typing you can train them for a piano.
